So this is where me and my friend Catherine do most of our cooking. It’s not too bad… to be nice… (BUT it’s not that great either). This is besides the point. At least we have a kitchen ;)

Greek Sandwich

So basically, this is yet another quick dinner that I made using pita pockets. (I’m in love with those things!) If you don’t live by a kroger/king sooper, I’m sure you could find something kind of like the “secret” filling. Let me explain this deliciousness…. it’s quinoa with garlic, tomatoes, and some other spices. Me and my friend found it at the grocery near the deli section on one of those carts where they sell “Greek” toppings and fillings like olives, artichokes, and garlic.  First you spread hummus (I prefer the Sabra’s roasted red pepper kind but you could use whatever). After, you fill with it with the delicious quinoa, lettuce and tomato. I chopped up bell pepper and finished off the hummus with them (quite delicious!)

One of the favorite college students food of choice is pizza. This must be because it tends to be inexpensive and fast…. I, however, am not a huge fan of take out pizza. It seems to lack quality flavor and leaves me feeling bloated and not energetic. This is such a simple and healthy way to replace the papa johns that your friends want to order (plus it’s a fun process choosing what you want to add!) Also, very inexpensive and super fast.

All you need is:

Pita Pockets

Mozzarella Cheese

Pizza Sauce

“Fillings”

I used artichokes, mushrooms, tomato’s seasoned with olive oil, and garlic.

A few other filling ideas are turkey sausage, bell peppers, olives, pineapple ect.

Put this in the oven on 350 for about 5 min.

Around 150 Cal per pita pocket (depending on stuffing’s)
